The United States is one of the largest commercial producers of spinach, and a small community in Alma, Arkansas is the self-proclaimed Spinach Capital of the World-boasting a statue of Popeye, the cartoon character, who extolled the virtues of spinach.  In times of trouble he would open a can of spinach, chow it down and BOOM; spinach amped-up his ample muscles and he could save the daythanks to the leafy green magic of spinach.  A little trivia note:  the original Popeye gained his power boost from rubbing the head of a magic chicken.  I’m thinking that was a good move to bag rubbing the chicken and just have Popeye eat a some spinach.

• 2 cups spinach leaves, packed
• 1 ripe pear, unpeeled, cored and chopped
• 15 green or red grapes
• 3/4 cup fat-free plain Greek yogurt
• 2 tablespoons chopped avocado
• 1-2 tablespoons fresh lime juice
