recipes Not sure the esteemed Ms Child’s meant crock pot cooking when she said the above, but I am a fan-all summer long.  Hope you try this super easy-nothing fancy-but really tasty recipe for chicken salsa-add some guac, sour cream, shredded lettuce, diced tomatoes, some jalapeno if that is how you roll-pass the warmed tortilla and you have a taco bar that will make your people smile! 

What You’ll Need:
4 – 5 Boneless Skinless Chicken Breasts, thawed
1 jar Smucker’s Peach Preserves {18 oz.}
1 jar Pace Medium Chunky Salsa {16 oz.}
Crockpot
What You’ll Do:

Cook chicken in crockpot on high for 3 hours {covered}
After 3 hours, drain juices from crockpot
Mix together Salsa and Peach Preserves
Pour mixture over chicken, and cook on high for 30 more minutes {covered}

We just recently hosted an open house for friends who were moving to Texas.  Set up a Tex-Mex taco bar and used this recipe for the chicken tacos-rave reviews.  I sometimes use the green chile salsa, and it is out of this world good.  Don’t wait for an open house to throw a Tex Mex party-your family will love this any night of the week….
